Have you always wanted to make a beautiful Yule Log for your Christmas table but found it daunting to make one because of all the steps? Worry no further, this time around we at Lanka Woman thought of bringing you a simple but yummy and beautiful Yule Log recipe.
In a large bowl beat the butter and sugar until creamy. Add each egg separately while beating the batter. Once the batter is all combined, sift together flour, coco powder and baking powder. Add the flour mixture to the already beaten batter while slowly combining and add the vanilla. Your cake batter is now ready. Divide the batter into two. Fill each baking tin with half of the batter. In a pre-heated oven bake the cake for 40 mins at 200c. Once the cake is baked insert a toothpick to see if it comes out clean. That way you know your cake is ready. Let the cake completely cool for 1 – 2 hours. For the frosting – in a bowl beat the butter and icing sugar till fully combined. Slowly add the coco powder and vanilla while continuing to beat.
Cut the crumbs off both the six inch round cakes that you have baked and cool. Sandwich them with the frosting you’ve made. Next cover the cake with a crumb coat and let it rest for 20 mins in the fridge. Now your cake is ready for decorating. Cover the cake with frosting. Use a fork and make designs making it resemble a log, finally decorate in anyway you like using chocolate, cherries and cucute figures.
