If you are a working mum like me, preparing breakfast in the morning can be a task, so I have made it my mission to come up with easy, quick and efficient recipes that you can whip up in a short span of time. Mainly trying to incorporate things that are easily sourceable ingredients or ingredients you thought were unusable.

Two medium size banana’s (you can even use overripe banana’s that you thought you needed to get rid of) Four table spoons of oats (you can substitute with flour)
50 ml milk
1 egg
½ teaspoon of vanilla essence
1 tablespoon of butter
Blender
Frying pan
Spatula
Step 1
Skin the bananas and mix them with the oats, egg, milk and vanilla. Two high speed blitzes and your batter is ready.
Step 2
in a frying pan melt the butter and pour out the batter in equal quantities and fry them on each side till they brown slightly.
Step 3
Your pancakes are ready to eat; these can be eaten just so or with a drizzle of either maple syrup or honey. Enjoy!!
