Hot and spicy chicken roast
Ingredients :
- 1 kg whole chicken
- 2tbs Olive oil
Marinade :
- 1tbs Garlic paste
- 1 tbs Ginger paste
- 1tsp Salt
- 1tsp Black pepper coarse
- 2 tbs Sriracha chilli hot souce
- 2 tbs Lemon juice
- 2 tbs Soy sauce
Method :
In a bowl mix above marinade ingredients, wash chicken and drain. Place chicken on a board, breast side down, use a scissor and remove the centre back born turn the chicken over and place the chicken on a baking tray lined with foil. Rube with a brush the marinade paste over the chicken inside and outside brush olive oil over and set a side for 30 minutes.
Pre heat over to 200 C for 10 minutes and bake the chicken for 35 minutes. Open the foil and brush the juice all over the chicken and bake for further 30 minutes with open foil. Remove chicken from the oven and serve with boiled vegetables.
Grilled Calamari Salad
Ingredients :
- 500 g Cuttlefish cleaned
- 4tbs Olive oil
- 4 Cloves Garlic chopped
- 2tbs Lemon juice
- 1tsp Salt
- ½ tsp Pepper
Salad Ingredients :
- 100g Fetta cheese
- 10 Black olives
- 10 Capers
- Salad leaves
- Few cherry tomatoes
Salad dressing Ingredients :
- ¼ cup Olive oil
- 2 pods Garlic chopped
- ¼ tsp Pepper
- ¼ tsp Salt
- Mix together in a bowl, serve with salad.
Method:
Cut down one side of each squid tube and open out. Halve lengthways and use a sharp knife to score the inside in a criss – cross pattern.
Salad dressing :
In a bowl mix olive oil, garlic, lemon juice, pepper, salt, and mix with squid and set a side for is minutes. Then grill the squid on a hot grilled and set a side. On a plate serve calamari on one side and on the other side serve the mix salad with cheese and salad dressing.
