Spicy Vegetable Crepes

Ingredients :

  • 1 cup all purpose flour
  • ½ cup chopped tomato
  • ½ cup chopped carrots
  • ½ cup chopped onions
  • 01 tab.sp. chopped green chillies
  • ½ cup chopped capsicum
  • ½ tsp. black pepper powder
  • 01 tab.sp. red chillie flakes
  • 02 tab.sp. chopped mint leaves
  • 02 eggs
  • 350 ml milk
  • Salt to taste

Mix everything in a bowl and keep it covered for half hour . Heat a flat non-stick pan (a roti pan is good) and rub some oil on the surface. Use a coconut shell (or any other similar spoon)spoon and pour a little of the mixture on to the pan and spread it evenly around the pan till its finely spread. Cook it on medium heat on both sides. Transfer on to a serving plate. You can eat the crepes either with some Tomato sauce or with tempered dhal curry or any other curry for a meal. Evening Snack

Ingredients:

  • 01 big potato boiled and mashed well.
  • 02 tab.sp. rice flour
  • ½ tsp. turmeric powder
  • ½ tsp. red chilli powder
  • ½ tsp. cumin powder
  • Salt to taste
  • 01 tab.sp. coriander leaves, finely chopped

  Mash the potato well in a bowl and add all the other ingredients and mix well. Take a table spoon full of the mixture to your palm and make it into a smooth ball. Repeat the process till your mixture is all made into balls. Place them in a non-stick pan, cover with a lid and cook it for 2 minutes . Uncover, turn them over in the pan and cook for another 2 minutes with the lid covered. Transfer the savory potato balls onto a plate and serve with tomato sauce for an evening snack.   maxresdefault
